Oh, I guess Vegan with a Vengeance is by the same person. I fake-knew her through the WeightWatchers vegetarian board, but look, she's also on LJ: http://isachandra.livejournal.com/ . And on it she recommends some independently published vegan cookbooks, which probably aren't at your neighborhood library.

I've also heard a lot of recommendations for the Uncheese cookbook, which someone mentioned already, and also How It All Vegan.
